Slow cooker (aka crock-pot) was an amazing find for me last year. ?Truth to be told, I had my reservation at the thought of getting one. For one, I?m trying not to become a hoarder for kitchen appliances. It can be hard at times especially when you can snap one up at a really good price during the sale season. ?I invested a really good ice crushing friendly glass blender years ago and I?ve only used it twice. The ice cream machine which I bought at a bargain two years ago is still sitting nicely in the box, unopened. You?ll get the idea.

What?s changed?

Four words ? packed lunches at work. Not mine but my co-workers?.

I often get recipes and cooking inspirations by peering through what they bring for lunch. I?m fortunate in the sense that they enjoy cooking and food and boy, their packed lunches often smell amazing. We often talked about what we make at home and share cooking tips. And that?s where I was motivated to get myself a slow cooker.

There are many websites such as Crock-Pot Ladies and 365 Days of Slow Cooking?which dedicated to cooking with a slow cooker.? And you know what, slow cooking is not limited to stew only.

Having said that, I have been making one particular curry with my slow cooker. Like a lot.

The Sri Lankan Chicken Curry Simmer Sauce by Passage to Sri Lanka brand has been my life saver whenever I wanted an easy meal preparation for the week.? Basically what you?ll need are a slow cooker, chicken thigh fillets, light coconut milk, and the simmer sauce. That?s it. No chopping board necessary.

I can only wish life is as simple as this. ;)

What?ll you need for 4 servings (pretty generously):-

  • 375g (13 ounces) simmer curry sauce of your choice*
  • 1kg (35 ounces) chicken thigh fillets
  • 135ml (4.5) light coconut milk (I used half of the 270ml Ayam brand light coconut milk)
  • A slow cooker (mine is the Sunbeam brand from Big W)

and cooking time: 4 hours

*I?d recommend you try this Sri Lankan Chicken Curry by Passage to Sri Lanka if you can find this at your supermarket. It tastes like homemade curry and I got many compliments when I made this for my friends. And yes, I entertained with pre-made curry sauce, whichever way to make cooking simpler ha! :) You can buy this simmer sauce in Woolworths.

a9 Cooking Shortcut: Slow Cooker + Ready Made Curry Sauce

Method:-

Basically you just mix the simmer sauce, chicken and coconut milk** together in the slow cooker (crockpot). Read the manual of your slow cooker for the recommended cooking time for chicken and the heat seating. For this particular Sunbeam one, I cooked the curry on heat seating number 2 (there are only 2 heat settings) for four hours. Stir the mixture around in the last hour of cooking to ensure the ingredients do not stick to the pot. Please note that according to my manual, it says that each time you remove the lid during the cooking time, it?ll take an extra 20 minutes of cooking due to the loss of heat when the lid removed. However, all in all 4 hours is more than enough for this curry. Get ready for melt-in-your mouth chicken thigh fillets! :)

Note ? For this amount of curry, the suggested amount uncooked rice is two cups.

** in case you?re wondering about the white cubes in the photo, they were my frozen leftover coconut milk.

Afghan attacks kill U.S. diplomat, soldiers, others

KANDAHAR, Afghanistan (Reuters) - A car bomb blast killed five Americans, including three U.S. soldiers and a young diplomat, on Saturday, while an American civilian died in a separate attack in the east.

The diplomat and other Americans were in a convoy of vehicles in Zabul province when the blast occurred, Secretary of State John Kerry said in a statement.

The soldiers and the diplomat died in the blast along with a civilian employee of the Defense Department and Afghan civilians, Kerry said. His statement gave no overall death toll.

The Washington Post identified the diplomat as Anne Smedinghoff, 25, citing her parents. Smedinghoff was Kerry's embassy guide and aide when he visited Afghanistan last month, the paper said.

Local and international officials in the region said earlier that six people died in the blast: three U.S. soldiers, two U.S. civilians and an Afghan doctor.

Provincial governor Mohammad Ashraf Nasery was in the convoy, but was unharmed, local and NATO officials said.

"Our American officials and their Afghan colleagues were on their way to donate books to students in a school in Qalat, the province's capital, when they were struck by this despicable attack," Kerry said in his statement.

He said he had met the diplomat during a trip to Kabul, and spoke to her parents after her death. Four other U.S. diplomats were wounded, one critically, Kerry said in his statement.

The convoy was near a hospital and a NATO base at the time of the explosion. Five Afghans, including a student and two reporters, were wounded, a local official said.

The attack came as the top U.S. general, Martin Dempsey, chairman of the Joint Chiefs of Staff, arrived in the country for a short visit to assess how much training Afghan troops need before U.S. troops pull out as planned by the end of 2014.

In an attack in Afghanistan's east, an American civilian working with the U.S. government was killed during an insurgent attack, the NATO-led International Security Assistance Force said in a statement.

Zabul shares borders with Pakistan to the southeast and Kandahar province, the birthplace of the Taliban, to the south.

The Taliban claimed responsibility for the Zabul attack in a text message from spokesman Qari Yousuf Ahmadi. He said a car bomb killed seven foreigners and wounded five others, although he later revised the toll to 13 foreigners killed and nine wounded.

The Taliban routinely exaggerates casualty figures.

The killings followed a bloody Taliban assault in the country's west on Wednesday that killed 44 people in a courtroom in Farah province. The United Nations says civilians are being increasingly targeted.

In a statement posted online earlier on Saturday, Ahmadi said the Taliban would continue to target Afghan judges and prosecutors.

"The Islamic Emirate, from today onwards, will keep a close watch over courthouses, all its personnel and all those who try to harm Mujahideen and will deal with them the same as the judges and prosecutors of Farah."

Caterpillar laying off 460 workers, cites weakness in mining

CHICAGO (Reuters) - Caterpillar Inc said on Friday it was laying off 460 workers at a U.S. plant that makes mining equipment.

The layoffs will affect about 11 percent of the workforce at the Decatur, Illinois, factory and reflect softening demand from the global mining industry, which is cutting back on capital investment because of a retreat in commodity prices.

Caterpillar, which had already implemented temporary layoffs and line shutdowns as well as a shortened work week in Decatur, said the permanent layoffs were needed to "bring production in line with demand."

It said the job cuts would take effect in 60 days.

Caterpillar is the world's largest maker of mining equipment. The Peoria, Illinois-based company also makes construction equipment, gas turbines and diesel engines, and railroad locomotives.

Minnesota Energy Tip: Saving Money

April is Financial Literacy Month, a campaign to help focus on our finances and develop healthy financial habits. One of the best ways to save money?month after month?is to conserve energy.

Whether it?s the middle of the hot summer or the dead of winter, there are several basic no- or low-cost measures you can take to conserve energy and decrease your utility bills:

  • Use a programmable thermostat to reduce your heating and cooling costs.
  • Turn off computers and monitors when not in use.
  • Plug home electronics, such as TVs and DVD players, into power strips and turn the strips off when equipment is not in use.
  • Turn off lights when not in use.
  • Close your fireplace damper when not in use.
  • Take short showers; turn your hot water heater down to 120 degrees.
  • Wash only full loads of dishes and clothes; air dry when possible.
  • Replace inefficient incandescent light bulbs with ENERGY STAR? rated compact fluorescent light bulbs (CFLs) or light emitting diodes (LEDs).
  • Look for the ENERGY STAR? label when purchasing new appliances, lighting, and electronics.
  • Have a home energy assessment to identify ways to make your home more energy efficient (weather-strip doors and windows, seal air leaks, add insulation, and more).
  • Go to work via carpool or vanpool, or use public transportation.

Dempsey: Decision on post-2014 US force can wait

STUTTGART, Germany (AP) ? In order to assess the strength of Afghan government forces, the U.S. should wait until summer or later before deciding how many troops to keep in Afghanistan after the combat mission ends in December 2014, the U.S. military's top officer said Friday.

"I'm not in any particular hurry" to come up with a number for what the U.S. military calls an "enduring presence" in Afghanistan, Gen. Martin Dempsey said in an interview.

Dempsey, chairman of the Joint Chiefs of Staff, offered no opinion on how many U.S. troops he thinks will be needed for the post-2014 mission of training and advising Afghans and continuing counterterrorism operations against al-Qaida and other extremists.

Other officials have said President Barack Obama may approve a residual force of up to 10,000 troops.

Dempsey said he thinks it would be wise to get a better feel for Afghan capabilities under the more difficult circumstances they will face without American troops playing the lead combat role.

"I'd like to see how they do in a fighting season," he said, referring to the period between late spring and early autumn when the Taliban typically put up the stiffest fight.

The U.S.-led coalition and the Afghan government have followed a phased approach to putting Afghan forces in the lead combat role in order to avoid their collapse and to keep the Taliban on their heels.

The final phase is supposed to start on an unannounced date this spring; that step had originally been scheduled for summer but it was advanced to springtime by mutual agreement between Obama and Afghan President Hamid Karzai when Karzai visited Washington in January.

Keeping U.S. troops in Afghanistan beyond 2014 will be subject to Afghan government approval. The terms of such an arrangement would be part of broader negotiations now under way between Kabul and Washington on a bilateral security agreement.

"My military judgment is that the decision about the enduring presence ... will be necessary to help us and our NATO allies plan, though actually pinning it down is not a matter of urgency," Dempsey said. "I think a range will be prudent to have by the summer."

There are now about 66,000 U.S. forces in Afghanistan.

Dempsey was in Stuttgart on Friday to preside at a ceremony installing Gen. David Rodriguez as the commander of U.S. Africa Command.
